Damak Antakya olive oils are early harvest products made from Hatay's centuries-old olive trees (Saurani, Halhalı, Karamani), picked while the olives are still green and at their highest polyphenol (antioxidant) level.

The olives are pressed using Cold Press technology at temperatures below 27°C within hours of being harvested, without allowing the fruit to touch the ground. This preserves the vitamins, the unique fruity aroma, and the slight burning sensation (a sign of freshness) in the olives.
